Healthy brownies – two ways

So last week I made two different brownies that were healthy for two different reasons: Refined sugar free and gluten free.

These brownies are the gluten free ones as I was making some for someone who is gluten free and everyone seemed to love them so I thought I’d share the recipe here! I found it online so all credits to them! (sweetest menu)


170g unsalted butter, melted

200g caster sugar

90g light soft brown sugar

1 teaspoon vanilla extract

3 eggs

40g cocoa powder

70g plain gluten-free flour


Preheat your oven to 160 c and grease and line a 8 square inch tin.

Mix together the melted butter, light brown soft sugar and caster sugar. Then add the vanilla extract and mix well.

Add all the eggs one at a time and mix very well in-between (TIP Mixing the eggs well will help get a more fudgey brownie)

Sift in the cocoa powder and the plain flour and fold in until just combined. Pour the batter in the tin and bake for around 30 minutes.

Take out and put on a cooling tray.

and ENJOY as they are delicious!

They second brownies were ones I made for myself as they are refined sugar free!


1 ripe avocado (cubed)

2 eggs

170g honey

1 teaspoon vanilla extract

75g plain flour

30g cocoa powder

1 teaspoon baking powder


Preheat oven to 175 c. Line tin.

In a blender, mix together the ripe avocado, eggs, honey and vanilla extract.

In a large bowl, whisk together the flour, cocoa powder and baking powder.

Combine the wet and dry ingredients. Pour batter into the tin and bake for around 25 minutes! Enjoy! I added some popcorn on top as well!

  1. I NEED to try these! They look so good and I’m always looking for healthier ingredients since I’m really trying to lose a good amount of weight. I can’t wait to read your post about the Samoa’s – they’re my favorite of the Girl Scout cookies!!
