Niomi Smart’s Vegan Date, Pecan and Banana loaf

Hello! So up until this weekend I had actually been rather healthy this January (minus the chocolate orange I demolished yesterday evening…) and this was one of the healthier bakes I made to satisfy my sweet tooth and since it was so utterly delicious I thought I would share the recipe with you!

The recipe actually called for walnuts but I just used pecans because they were what I had in the cupboard. Here are the ingredients you will need:

a little coconut oil for greasing the tin

2 and a half ripe banana

200g buckwheat flour

25g chopped pecans

1 tsp baking powder

1 tsp bicarbonate of soda

110g dates (I used medjol)

190 ml nut milk

and the method:

preheat oven to 170oc and grease a loaf tin with coconut oil and line with greaseproof paper

mash 2 banans and slice the remaining half

combine flour, nuts, baking powder, bicarb of soda in a bowl.

stir in the mashed banana and sliced banana and chopped dates and slowly add milk and mix until fully combined,

put mixture in ย the tin and bake for around 35 minutes. A knife should come out clean when it is fully cooked
