Hello!
So, I generally like to stay away from refined sugar. Now I do have days of weakness when someones baked a cake and I just give in, but at home when I bake for myself I like to go refined sugar free. Last month, I got given a natural cookbook which is called Natural Baking it is all about baking slightly healthier. I saw this recipe for Chocolate cupcakes and decided to make it!
Here is the recipe: (makes 12 muffins)
Ingredients –
2 tsp cider vinegar.
200ml non dairy milk
1/2 tsp vanilla extract
60g coconut oil (melted)
320g slept flour
160g coconut sugar
6 tbsp cocoa powder
4 tsp baking powder
pinch of salt
3 tbsp cold espresso
For the icing:
2 ripe avocados
2 ripe bananas
3 tbsp maple syrup or any other liquid sweetener
4 tbsp coconut il
8 tsp cocoa powder
1/2 tsp vanilla extract
Peanut butter (optional but delicious!)
Method:
Preheat the oven to 180 oc. Whisk together the cider vinegar, milk and vanilla and set aside. Mix the flour, sugar, cocoa powder, baking powder and salt in a large bowl and add the liquid mixture, coconut oil and espresso. Stir until just combined.
Put in 12 cupcake cases in a muffin tray and bake in the oven for 18 to 23 minutes, until risen and a swelter come out clean. Remove from the oven and leave to cool.
To make the icing, pt all the ingredients in a blender and pulse until it is silky smooth. Chill in the fridge for at least 30 minutes before frosting.
(optional) Smooth over peanut butter on top f the cooled cake and frost anyway you want!
